Amy’s Fit and Lean Pasta an Vegetables –
A great frozen dinner for super busy calorie counting moms!
I am really kicking up my healthy goals this year. Although I did complete the Couch to 5k and really am the strongest I have ever been muscle wise. However, I still need to drop my middle, so to speak.
So that mean counting calories.
And with time ticking away to my big Anniversary Stay-cation in the Los Angeles Area I am learning to count calories like a Pro.
This week I purchased several of Amy’s Fit and Lean meals as a quick lunch. These freezer meals will be a lifesaver with my busy lifestyle and with the calories already counted it saves me lots of messy measuring cups and lots of time.
Weighing in at a mere 210 calories the Amy’s Fit and Lean Pasta with Vegetables is so darn good. Stand alone it rocks but I add one sliced organic heirloom tomato and it honestly kicks up the flavor a couple of notches. When I finish my lunch I feel like a million bucks.
* When I finish a burger and fries I generally feel like the losing team after the big game.( Sorry, but I am still a little miffed at that huge loss by the Fighting Irish)
Ingredients: Rotini, shallots, organic asparagus spears and broccoli florets. Tossed with a pasta sauce made from organic tomatoes seasoned with herbs and Parmesan cheese.
Awesomeness rating: 4.5 stars – In a perfect world it would have a bit less pasta and more veggies for added high nutrients. But it still totally rocks.
