Yesterday I made an excellent Paleo Pot Roast from the Paleo Cupboard in the crock pot! It came out tender and juicy and the recipe was pretty much perfect as far as a roast goes. It was so simple and I felt like such a rock star mom serving my little guy his first roast with all the fixings of a true budding Paleo family. The only thing I did not have where to right sized mushrooms so today I am sautéing a few to eat with leftovers.
I am just cracking open the newest happiness project book to see if I can find some useful tidbits. So far she has just been chatting about herself, which for my no-nonsense mind is absolutely nerve racking! Will let you know it if gets better but here is the link so you can take a peek.

February 14, 2014 athi Pam! Glad your roast turned out. I used to make Nik the pot roast from Leanne’s Saving Dinner Basics with red wine and tarragon and he said it was good. I will have to see if the library has this. I don’t know why but I couldn’t get through the Happiness Project.
